The best thing about Thanksgiving is eating the leftovers for lunch the next day imo 🦃 I have many things to be thankful for this year, most of all spending it at home with my family for the first time in 5 years, and being able to share it with Derek. This year marks our second wedding anniversary and another holiday with our puppy (probably the most miraculous of all).

This year I contributed to the dessert table. Nothing fancy, this is your standard pecan pie, straight off the back of the Karo bottle. I made a homemade pie crust based on the linked recipe, swapping out 1 tablespoon of vanilla for one tablespoon of ice water just to give the crust more depth and flavor. Safe to say, the majority of the pie did not make it to “leftover” status, and none of it made it past second day. Perfect for any holiday get together, this simple pecan pie is easy to pull together and always quite delicious.

You can never go wrong with a classic pecan pie for the holidays. It’s sticky sweet filling is always a crowd-pleaser, and homemade pie crust is easier to throw together than you think. I’m not sure what I’ll be making for Thanksgiving this year, but I know a pecan pie will definitely be present on our table.
