Pumpkin Spice Frosted Cookies

Who says frosting sugar cookies is only for Christmas? I decided to add a bit more fall festivity by making these pumpkin spice cookies with royal icing. I mean, is it even fall if you don’t make something pumpkin spice?

Frosting cookies is not my favorite, nor is it my best skill. However, I am determined to get better at it (a Christmas batch is coming). I’m actually pretty happy with how these turned out. Color and the consistently of the icing were my biggest problems, but overall I think it’s the best batch of decorated cookies I’ve ever made.

If you’re a fan of sugar cookies but want that extra hint of fall, these are a perfect match for you. If I’m being honest, I even had one or two with my morning coffee 🎃 ☕️

Like I said, I am not the biggest fan of frosting cookies, especially if it’s with something as technical as royal icing. I only made this specific batch one time last year, but the cookies were so yummy and the dough was very easy to work with. If I did make them again, I would use a buttercream frosting instead of the royal icing. While royal icing looks beautiful, it is tricky to work with, a tad bit messy, and not as sweet as a buttercream. My piping skills were much improved when I made my Christmas batch of sugar cookies, so if royal icing is something you’d like to use, practice does make perfect. But I really do think adding a spiced buttercream, or another complimentary flavor profile, would make these cookies the perfect treat for fall.
